Peach Cobbler Recipe
Eating fruit and bread together is not the best food combination as grains digest at a different rate than fruit. However, you can try this recipe for an occasional treat.
Ingredients:
Part 1:
- 5 cups fresh peaches (sliced) – that’s about 6-8 peaches
- ½ cup brown sugar
- 2 pinches salt
Part 2:
- 8 Tbs butter
- 1 cup whole wheat flour or substitute your favorite gluten free flour, etc as needed
- 1 cup brown sugar
- 2 tsp baking powder
- 2 pinches salt
- 1 tsp cinnamon, 1/4 tsp cardamom
- 1-2 Tbs freshly peeled and finely chopped ginger root
- 1 cup milk
- Garnish: generous helping of cinnamon
Directions:
Part 1: Combine and mix gently and set aside
Part 2:
- Heat oven to 350 degrees Fahrenheit
- place butter into 11"x7" or 8"x8" baking dish and set in oven for a few minutes until it's melted
- Combine all ingredients in part 2 (aside from garnish) until very loosely combined (don't over stir)
- Pour into baking dish with melted butter
- Pour Part 1 over Part 2
- Garnish generously with cinnamon all over the top
- Bake for approx 40-60 minutes or longer/shorter as needed until golden crispy on top and tooth pick comes out clean in doughy areas
