Simple Subji (Sauteed Veggie Delight)

Ingredients:

  • 2 Tbs ghee

  • 1 Tbs cumin seeds

  • 1 tsp turmeric powder

  • 1 tsp coriander powder

  • 1 tsp salt

  • 4 cups chopped vegetables of choice

  • 1 tsp garam masala (optional)

  • 1 handful of chopped cilantro leaves for garnish after it stops steaming

  • Juice of 1/2 lime for garnish squeezed over after it stops steaming

 

Directions:

  • Chop veges

  • Prep spices, ghee, salt, garnish

  • Melt ghee in medium sized frying pan on medium-high

  • Once melted, add all spices (aside from salt) in the order listed above

  • Saute until they smell aromatic

  • Add vegetables and coat with oil

  • Saute 1-2 minutes

  • Add few Tbs water, mix again

  • Cover, turn heat to medium-low and cook until aldente

  • After veggies are well cooked, cool until stop steaming and add garnishes of choice and enjoy!
