Ayurveda Green Chutney Recipe with Cilantro and Mint

Ingredients:

2 bunches cilantro

1 bunch mint (or omit if you don't have any one hand it's fine =)

1½ tsp cumin seeds

Juice of 1-2 limes
-
1tsp salt to taste

½ thai green chili (seeds removed – careful of eyes & face)

½-1 cup water – enough to blend easily (distilled is good as it will not go bad as fast) if you end up with chutney that is runnier than you want, just add some coconut flakes and blend again

shredded coconut to thicken as desired (can omit completely for runnier chutney, or 2tsp-1Tbs for thicker chutney)
Directions:

Remove leaves from stems and put into blender

Blend all together starting with minimal water needed (within reason) to make it blend (Ninja works great)

Avoid over-blending as cilantro will oxidize faster with more exposure to air

If you want to, After you blend, you can add 1-2 Tbs of roasted chana dhal and blend again to thicken it and absorb excess water
