Chapatis are deeply satisfying “tortillas” which can be made homemade 1-2 times per week and set in fridge ready to cook fresh with your meals. You can use one flour or a combination of flours made from common grains and dhals such as: barley, oats, millet, quinoa, rice, spelt, amaranth, tapioca, garbanzo, mung, etc).
Ingredients:
-
1.5 cup wheat (bread) flour
-
1/2 cup barley flour
-
2 Tbs arrow root flour
-
1 tsp salt
-
Approx. 1 cup cold water or fresh yogurt or combo. Enough fluid to moisten dough & make it pliable but not sticky
Directions:
-
Mix flours and salt together
-
Add in water and knead a few minutes
-
Pinch off a piece and roll flat
-
Grill on frying pan with no oil
-
Place on open flame to “puff up” on both sides (electric stove: press and turn chapati with wide spatula to assist it in puffing up on griddle).
